Here we were thinking she was just a crazy woman spouting off about beetroot, but if you think about it, she probably just discovered my all-time favourite juice combo ahead of the pack. Clearly a woman of great wisdom... ;-)

Growing up, this was one of my dad's favourite tunes to strum (and sing along to) on the guitar. My dad likes to sing pretty loudly, probably harking from his days as lead singer in the band "Skonkie, Tommy & Ek" ("Ek" means "I" in Afrikaans). At least that was the title scribbled in pencil on the tape* that him and his two friends recorded one summer. Summertime featured twice on this tape (side A & side B) and was clearly a firm favourite of the wannabe musicians. Perhaps the temperatures were as high as their aspirations when they recorded it?

Other times, well, you're faced with a glut of *insert vegetable of your choice here* and your mission is to find a recipe which will assist you in whittling down your stash of said vegetable.

Pancar Salatasi (Beetroot with Yoghurt)


Now I'm not normally the world's biggest fan of pink (a certain dou person springs to mind here, eh @polkadotcupcake, @JulyAte and @mdd1985?), but there is something about the brilliant deep pink of beetroot that just screams "Hello world!" It's the vegetable equivalent of slapping on some body glitter, slinging on a feather boa and heading out to town in your tear inducing pointy-toed stilettos.

Beetroot Burgers


We're quite a carnivorous bunch, aren't we? And by "we", I refer to us here on the southern tip of Africa. As the old joke goes, if you want veggies, you eat boerewors, and chicken is more than sufficient to take care of your fruit requirements. As child I used to drive my mom crazy with my requests for a "veisie" (riff on vleisie = small piece of meat) and there was nothing more pleasurable than sucking the meat off the bones at a braai. Or munching on a crispy, salty, oily piece of pork rind. *crunch* Not to mention fishing out the marrow from marrowbones and slurping it up with all the accompanying sounds that go with it!

Savoury Crumble


So things are in disarray at chez Pot to put it mildly. Boxes are strewn everywhere, some already filled and tightly duct-taped, others still waiting to fulfill their destiny and spending their time hiding from the cats who have deemed them the perfect toys. Diving underneath them, running over them, climbing into them - yup, it's a grand old time to be a kitty at the flat. Add to that rolls of tape and string and you've got the makings of cat paradise. I think they'll be quite disappointed once we're settled in the new house and all the packing paraphernalia has been tossed out.

I've always been enamoured by the idea of a CSA type veggie box. Enamoured because of the whole feel-good green vibe (I'm a closet greenie, okay) and also a little petrified, because, when it comes to food, I'm a bit of a control freak. In most other parts of my life I'm so laidback that I'm pretty much horizontal, but when it comes to what we're eating and specifically what I'm making, I like to plan out my meals and this of course requires full control of the grocery buying (and choosing) process.

Chocolate Beetroot Cupcakes

These were supposed to be red velvet cupcakes, but the beetroot colour clearly wasn't strong enough to permeate the darker cocoa. Nevertheless, these were excellent both in texture (fluffy and deliciously moist at the same time) and in taste (chocolatey with a hint of sweetness from the beetroot). The creamcheese frosting complemented these perfectly. I don't think you could ask for a happier accident!

Borscht

Time to be honest: I'm not a big fan of brothy soups. I prefer my soups thick and smooth. The need for chewing should be minimal. That's not to say I don't like a brothy soup every now and again (can anyone say miso?), but they generally don't form part of my top ten, soup-wise. And apologies to my Eastern European counterparts, but a soup consisting of cabbage and beetroot chunks floating in a thin broth really didn't sound too appealing.

Beetroot Soup


I actually bought the beetroot to roast in the oven, along with some other winter vegetables, but it was such a miserable day that I decided that soup would be the only thing that could sufficiently warm us up.
